Date and Nut Energy Boost Balls

A vegan snack that IS both healthy and delicious. A perfect pre and post-workout snack for that much-needed energy boost!

Ingredients


  • 1 cup pitted dates

  • 1 cup mixed nuts (such as almonds, cashews, walnuts, or pecans)

  • 2 tablespoons unsweetened cocoa powder or cacao powder (optional)

  • 1 teaspoon vanilla extract

  • Pinch of salt

  • Shredded coconut or cocoa powder for rolling (optional)


Instructions


1. Prepare the Dates and Nuts: If your dates are not soft, soak them in warm water for about 10-15 minutes to soften. Drain well before using. If your nuts are raw, you can toast them in a dry skillet over medium heat for a few minutes until they become fragrant. Let them cool before using.


2. Combine Ingredients: In a food processor, combine the pitted dates, mixed nuts, cocoa powder (if using), vanilla extract, and a pinch of salt. Pulse the mixture until the nuts are finely chopped and the mixture starts to clump together. If the mixture is too dry and crumbly, you can add a teaspoon or two of water to help it stick together.


3. Form the Boost Balls: Once the mixture is well combined and sticky, use your hands to roll it into small balls, about 1 inch in diameter. If desired, you can roll the balls in shredded coconut or cocoa powder for an extra layer of flavour.


4. Chill: Place the boost balls on a baking sheet lined with parchment paper and chill them in the refrigerator for at least 30 minutes to firm up.


5. Serve or Store: Once chilled, the boost balls are ready to serve. Enjoy them as a healthy snack or dessert! If you have leftovers, store them in an airtight container in the refrigerator for up to two weeks.
