Oats
Oats are rich in antioxidants and can help lower cholesterol levels and even improve blood sugar levels.
Blueberries
Blueberries contain vitamins, minerals, and antioxidants that provide notable health benefits. For example, blueberries are rich in vitamin K, which helps promote heart health. The vitamin is also important in bone health and blood clotting.
Ingredients
2 cups rolled oats
1 cup almond butter (or peanut butter for a nuttier flavour)
1/2 cup maple syrup (or honey)
1/4 cup chia seeds
1/4 cup ground flaxseed
1/2 cup dried blueberries (or other dried fruits such as cranberries or raisins)
1/4 cup unsweetened shredded coconut
1 teaspoon vanilla extract
Pinch of salt
Instructions
1. Preheat the oven:
Preheat your oven to 350°F (175°C). Line a baking dish or pan with parchment paper or grease it lightly to prevent sticking.
2. Mix wet ingredients:
In a large mixing bowl, combine the almond butter (or peanut butter) and honey (or maple syrup). Microwave the mixture for 30-60 seconds to soften it if needed, making it easier to mix.
3. Combine dry ingredients:
Add the rolled oats, chia seeds, ground flaxseed, dried blueberries, shredded coconut, vanilla extract, and a pinch of salt to the wet ingredients. Stir until all the ingredients are well combined and evenly distributed.
4. Press into pan:
Transfer the mixture to the prepared baking dish or pan. Use a spatula or your hands to press the mixture firmly and evenly into the pan, smoothing the top as you go.
5. Bake:
Bake the breakfast bars in the preheated oven for 15-20 minutes, or until the edges are golden brown and the bars are set. Keep an eye on them to prevent burning.
6. Cool and slice:
Remove the pan from the oven and let the bars cool completely in the pan. Once cooled, use a sharp knife to slice them into individual bars or squares.
7. Store:
Store the breakfast bars in an airtight container at room temperature for up to a week. You can also store them in the refrigerator for a longer shelf life.
