Roasted Sweet Potato Stuffed With Feta Cheese And Kale

Enjoy these delicious sweet potatoes and give you and your family an amazing superfood hit. They are loaded with minerals and A, B and C vitamins.
Ingredients
2 large sweet potatoes
1 cup chopped kale leaves, stems removed
1/2 cup crumbled feta cheese
2 tablespoons olive oil
2 cloves garlic, minced
Salt and pepper to taste
Optional toppings: Chopped fresh herbs (such as parsley or coriander), red pepper flakes, balsamic glaze
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Wash the sweet potatoes and pierce them several times with a fork. Place them on the prepared baking sheet and roast in the preheated oven for 45-60 minutes, or until they are tender when pierced with a fork.
3. While the sweet potatoes are roasting, prepare the kale filling. Heat olive oil in a skillet over medium heat. Add minced garlic and cook for 1-2 minutes, until fragrant.
4. Add the chopped kale to the skillet and cook for 3-5 minutes, stirring occasionally, until the kale is wilted and tender. Season with salt and pepper to taste.
5. Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly until they are safe to handle.
6. Slice each sweet potato in half lengthwise and carefully scoop out some of the flesh to create a hollow space for the filling. Reserve the scooped-out sweet potato flesh for another use or discard it.
7. Divide the cooked kale mixture evenly among the sweet potato halves, filling the hollowed-out portion.
8. Sprinkle crumbled feta cheese over the top of each stuffed sweet potato half.
9. Return the stuffed sweet potatoes to the oven and bake for an additional 5-10 minutes, or until the feta cheese is slightly melted and bubbly.
10. Once done, remove the stuffed sweet potatoes from the oven and let them cool for a few minutes.
11. Garnish with chopped fresh herbs, red pepper flakes, or a drizzle of balsamic glaze.
