Comfort Food: Lentil Soup With Tomato And Potato

This hearty soup is perfect for a cosy meal any day of the week.

This soup is the ultimate comfort food. Packed full of goodness and ready in 30 minutes, or freeze it and save some for a rainy day.

Ingredients


  • 1 cup dried brown or green lentils, rinsed and drained

  • 1 onion, diced

  • 2 cloves garlic, minced

  • 2 carrots, diced

  • 2 stalks celery, diced

  • 2 medium potatoes, peeled and diced

  • 1 tin (14 oz) diced tomatoes

  • 4 cups vegetable or chicken broth

  • 1 teaspoon ground cumin

  • 1 teaspoon paprika

  • 1/2 teaspoon turmeric

  • Salt and pepper to taste

  • Olive oil for cooking

  • Fresh parsley or coriander, chopped (for garnish, optional)

  • Lemon wedges (for serving, optional)


Instructions


1. Heat a drizzle of olive oil in a large pot over medium heat. Add the diced onion, garlic, carrots, and celery. Cook until softened, about 5-7 minutes.

   

2. Add the diced potatoes, lentils, diced tomatoes (with their juices), ground cumin, paprika, turmeric, salt, and pepper to the pot. Stir to combine.


3. Pour in the vegetable or chicken broth and bring the soup to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 20-25 minutes, or until the lentils and potatoes are tender.


4. Taste the soup and adjust the seasoning if needed, adding more salt and pepper to taste.


5. If you prefer a thicker consistency, you can use an immersion blender to partially blend the soup, leaving some chunks of vegetables and lentils intact.


6. Serve the lentil soup hot, garnished with chopped fresh parsley. You can also serve it with lemon wedges on the side for squeezing over the soup before eating.
