This recipe features thick slices that give you that satisfying crunch while still being tender on the inside. Enjoy them with your favourite sauce, or enjoy their goodness on their own!

Benefits of Sweet Potatoes

  1. Rich in Nutrients: Sweet potatoes are high in vitamins A, C, and B6, as well as potassium and fibre.

  2. Antioxidant Properties: They contain antioxidants like beta-carotene, which may help protect your body from free radicals.

  3. Support Digestive Health: The high fibre content aids in digestion and promotes gut health.

  4. Boost Immune Function: The vitamins and minerals in sweet potatoes can help enhance your immune system.

  5. Stabilize Blood Sugar: Despite their sweetness, sweet potatoes have a low glycemic index, which helps regulate blood sugar levels.

Ingredients

  • 2 large sweet potatoes

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon smoked paprika

  • ½ teaspoon ground cumin

  • ½ teaspoon dried thyme

  • ½ teaspoon dried rosemary

  • Salt and pepper to taste

  • Optional: fresh herbs for garnish (like parsley)

Instructions

  1. Preheat the Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper for easy cleanup.

  2. Prepare the Sweet Potatoes: Wash and peel the sweet potatoes. Cut them into thick slices (about 1/2 inch thick) to ensure they stay tender on the inside while getting crispy on the outside.

  3. Season the Fries: In a large bowl, toss the sweet potato slices with olive oil until evenly coated. In a separate bowl, mix garlic powder, onion powder, smoked paprika, cumin, thyme, rosemary, salt, and pepper. Sprinkle the seasoning mix over the sweet potatoes and toss to coat evenly.

  4. Arrange on Baking Sheet: Spread the seasoned sweet potato slices in a single layer on the prepared baking sheet, ensuring they have space between them for even cooking.

  5. Bake: Bake in the preheated oven for about 25-30 minutes, flipping halfway through, until they are golden brown and crispy on the edges.

  6. Serve: Remove from the oven and let them cool for a few minutes. Garnish with fresh herbs if desired. Enjoy your delicious herb-seasoned sweet potato fries!

Tips

  • For extra crispiness, you can soak the cut sweet potatoes in water for about 30 minutes before seasoning and baking.

  • Experiment with different herbs and spices to find your perfect flavour combination!
