One Tray Honey and Mustard Chicken

This delicious one-tray meal is rich in protein and nutrients. Perfect for a midweek family dinner or as an alternative to a Sunday roast.

Benefits of Chicken
Chicken is a popular and versatile protein that offers numerous health benefits as it is rich in nutrients, supports muscle growth and boosts immune health
Ingredients
4 boneless chicken thighs
1 cups of baby potatoes, halved
2 handfuls of baby tomatoes
2 handfuls of green olives
60 grams of feta chopped
3 tbsp olive oil
2 tbsp dijon mustard
3 cloves of garlic crushed
1 tsp dried thyme
Salt and pepper to taste
Instructions
1. Preheat oven
Preheat your oven to 200 degrees
2. Prepare the sauce
In a small bowl, whisk together olive oil, honey, dijon mustard, garlic, thyme, salt and pepper
3. Arrange ingredients
Place the chicken thighs in the centre of a large baking tray and arrange the potatoes, tomatoes, olives and feta around the chicken
4. Coat the chicken
Drizzle the honey and mustard sauce over the chicken
5. Bake
Bake for 25-30 minutes or until the chicken is cooked through and the tomatoes are tender. Serve straight from the tray to make this a hassle-free dinner with minimal clean-up
